Banana Pancakes

I’ve never been that bothered about pancakes. They don’t really have much flavour, unless smothered in toppings, and they’ve just never appealed to me. I enjoy the occasional pancake (on Pancake Day obviously) but never think, ohh I need a pancake. Unlike all of my housemates in first year, who ate pancakes once a week while I looked on, slightly baffled.

Despite my nonchalant attitude towards these pan cooked cakes, I obviously fell in love with the popular Pinterest banana egg pancake and have made them quite a few times. They have a nicer flavour than pancakes (aka they have a flavour) and they’re not high on the unhealthy scale so can be enjoyed for breakfast guilt free. Obviously not so much when smothered in Nutella butttt hey ho, no one is perfect!

Strawberries Nutella pancake

You’ve probably seen this recipe plastered over Pinterest, Instagram and blogs everywhere but here it is again in a convenient place for Pancakes Day.

Ingredients (for one)

Pancake

Large overripe banana
2 Eggs
1/4 Teaspoon baking soda
Drop vanilla extract

Toppings

Nutella
Sliced strawberries

To cook

Coconut oil

Mash the banana in a bowl and add the baking soda, eggs and vanilla and whisk. Baking soda goes quite lumpy with egg so I’d say use an electric whisk to make it a bit easier.

Heat up the coconut oil in the pan (medium – high) and ladle some of the mixture to make a small circle. Cook for about 2 minutes, or until the mixture doesn’t slop everywhere when you shake the pan. Flip and cook on the other side for another 2 minutes.

Plate up, add a dollop of Nutella and sliced strawberries then repeat until you’ve run out of mixture.

The mixture for this looks darker than normal pancakes, which I think is just the banana frying as it never tastes burnt. It is also spongier than normal pancakes, which is the baking soda, which is why I cook small ones and stack rather than making one big one and rolling.

If you’re not feeling Nutella and strawberries, I think this would taste amazing topped with peanut butter and honey, chocolate chips and blueberries, or even ice cream. Mmmmmmmmm.
