What I’ve Eaten Lately

Sticking with the theme of food, I thought today I’d show you all what I’ve been eating lately. I love reading posts like this on other blogs, because I’m nosy and greedy, so I thought I’d do one myself. I keep track of most of what I eat over on Instagram so I have a handy little food diary of my food, obviously I’ve sifted and picked the best (although not necessarily the healthiest) things I’ve eaten over the past few weeks. Hopefully it will inspire you, or at least make you feel hungry and reach for the chocolate because I’ve eaten a LOT this weekend and I think everyone should indulge so it’s not just me.

Green juice (with beetroot, hence not being green!). I went to the #CurrysIntrojuicing event last weekend where I got to try out making juices and mocktails with fresh fruit and veg, as well as learn about juicing and do some rocket yoga! I’ll be posting about this at some point when I get time to be with my laptop, I feel like we’re on a break at the minute. Sorry Sony, I know I’ve neglected you lately!

Banana pancakes with nutella, prunes and chopped cashews. Protein, carbs, fibre, fats. What more do you want from breakfast?

Sticky toffee muffin from Love Coffee! I did ask Scott if he wanted to share one to try and do some damage control but he wanted a full one and I had no choice but to eat every single delicious bite.

Goats cheese and caramelised onions burger with extra avocado from Handmade Burger Co. This was amazing! Since turning vegetarian I’ve avoided burger bars but Handmade Burger Co have five amazing looking vegetarian burger, one of which is totally vegan. If you’re in Leeds, Trinity Kitchen has an app which offers loads of discounts so we got the two burgers for £10! I also had a corn on the cob and Scott and I shared some Cajun onion rings. Delicious.

Baked Buffalo Cauliflower Bites. Me and Scott are doing the 5:2 diet (I’ll talk about this more at some point when me and my laptop make up) so two days a week we have to get creative with low calorie cooking. These buffalo cauliflower bites are so nice, easy to make and low calorie. I had them with veg and feta stuffed mini portabello mushrooms. Delicious.

Roasted Sweet Potato Soup. This was the easiest soup ever, I just roasted sweet potatoes, parnsips, carrot, onions and garlic for half an hour, finished off by boiling in stock and whizzed up with some ‘erbs n spices’. Simples.

Nutella and banana on toast. The nicest snack ever! Banana on toast is just amazing, either on it’s own, with Nutella, or with peanut butter and honey.

Homemade pitta bread. See the recipe here, it’s delicious.

Eggs on toast is like my go to breakfast at the moment. It keeps me full all morning and means I’m getting good amounts of protein, which is a bit of a struggle now I’m vegetarian. But I mainly included this picture because #yolkporn.

Mexican black bean burgers. I’m obsessed with black beans now, I wish I’d tried them earlier! You can see my recipe here.

Stuffed mushrooms with creamy beans. This was a recipe from my Student Vegetarian Cookbook, it was incredibly nice and hearty. Not the lowest calorie dish but full of healthy proteins, fats and carbs, tasted super indulgent and kept me full for ages. I need to make this again but getting beans is such a chore, nowhere sells them except the continental market!

Baked egg in avocado. Unreal, do it now.

Aside from these tasty dishes, I’ve been eating my Graze boxes (I’ve just switched from Graze Light to Chocolate because I’m a greedy little pig), Nakd bars, pasta, jacket potatoes… I am such a carb muncher, although I always make sure I have some healthy fats in my meal, either by chucking in an avocado or cooking something in coconut oil. I actually have been struggling to get a lot of protein in on a daily basis, I need to look up more beans and legumes recipes! At the moment I need all the carbs I can get with half marathon training but when I finish and switch up to weights, I’ll need to eat way more protein and a lot less carbs. Eep!
