Low Fat Cauliflower Cheese

I feel like it’s been ages since I’ve posted a recipe! I have been cooking up a whole bunch of things (see my healthy food instagram!) but I’ve just not felt like writing any up and posting them. But I am back with this low fat version of family favourite cauliflower cheese, and the sauce honestly tastes as nice as any full fat one I’ve ever had. The mustard gives the sauce this warm depth that just makes it the perfect comfort food.

Healthy caulilfower cheese recipe

Low fat cheese sauce

This recipe makes two side portions, so adjust the quantities accordingly.

Ingredients:

180ml skimmed milk
1 tablespoon all purpose flour
60g reduced fat cheese
1 teaspoon Dijon or French mustard
Pinch of salt and pepper
Medium cauliflower

Preheat the oven to 180 degrees.

Chop the cauliflower into bitesize pieces and boil for 5 – 8 minutes, until soft but not mushy, and set aside to steam off.

Whisk together the milk and flour until lump free (this should only take a minute or so), place in a saucepan over a medium – high heat and bring to the boil. Make sure you stir constantly!

Once it’s brought to the boil, reduce the heat and stir constantly for a few minutes until the sauce is noticeably thicker. Remove from heat, stir in 3/4 of the cheese until melted and then stir in the mustard, salt and pepper.

Toss the cauliflower in the sauce and put in an oven dish. Sprinkle the rest of the cheese on top and put in the oven until the cheese is golden (around 20 – 25 minutes).

This makes such an amazing side to chicken and potatoes, but if you like it that much you want to eat a whole portion of it, I’d suggest frying some bacon and chicken up and mixing it with the cauliflower to bake. You could also use this sauce for the white sauce in lasagne, or for macaroni cheese. Easy, tasty, low fat and yummy. What more do you want?
