Easy vegan dessert

If there’s one thing that could tempt me to go vegan, it’s the food blogs out there like Chocolate Covered Katie and Deliciously Ella which feature mouth watering desserts that make my tasty but messy homemade creations look like something the dog would turn its nose up at. I go on these blogs at least a few times a week, determined to find something that’s healthy but naughty to make only to find I need 99 ingredients which can only be bought at health stores, and therefore cost more per gram than it would cost for me to buy a whole cake from Valerie Patisserie. Erm, no. When Nakd Whole Foods sent me some Nakd bars* to try out a few vegan recipes which didn’t require the earth, I was extremely excited. I love Nakd bars, especially the Cashew Cookie, and have been having them at work when I need a little something to get me through the day.

I tried out their recipe for Nakd Chocolate Strawberry Tarts, which I believe was created for them by Wallflower Girl (another delicious vegan blog). I made mine a bit non Vegan (but by adding Nutella so I hope you’ll forgive me) but for the vegan option, just ommit this!

Nakd bar recipe

Ingredients (serves 2)

4 x Nākd Cocoa Crunch Bars
1 small ripe Avocado
4 tbsp cocoa powder
4 tbsp maple syrup (if you’re not vegan, you can use honey as a substitute)
1 tbsp coconut oil
1 tbsp Nutella (not for vegans!)
1 capful vanilla extract
Approx 20 strawberries

The first step is blending the Nakd Cocoa Crunch bars, but my blender can barely cope with liquids so we put them in a zip lock back and bashed them with a rolling pin until they were kind of small crumbly pieces, and then I moulded them into my ‘tart dish’, which so happens to be a little mini oven dish I got with some camembert at Christmas…

The next step is to blend the rest of the ingredients together. I originally tried the ganache without the Nutella, and while it was nice I wanted it a bit sweeter. I think those flavoured coffee syrups would also do the trick though!

Pour the ganache into the base, slice some strawberries and top, then put into the fridge to chill for half an hour. I didn’t read this part and tried mine straight away and as it hadn’t set, it collapsed into a (delicious) mess. So I would recommend definitely chilling!

If you’re looking for a healthy, easy and tasty dessert this is definitely a good one to try, and a good intro into vegan desserts without needing to buy loads of ingredients. If you want a slightly prettier turn out, here’s the original recipe I’ve seen avocado in chocolate desserts before and have always been intrigued, and now I know they work I’m definitely going to try it out again. Probably when I reach that stage where I have too many avocados all about to go off at once, and I don’t fancy guacamole. I’m also quite excited to try other Nakd bar flavours in desserts, as well as eating more flavours in general!
