Diet Coke Chicken

Yep, you heard me right. Diet coke chicken. I get it’s a totally bizarre concept, it’s actually why I was so intrigued to try it! It’s actually a slimming world recipe and I’ve been eating really unhealthy lately (lack of planning and LOTS of stress = me being a sad couch potato) so I decided to give it a go. It’s actually surprisingly nice, like a tangy barbeque sauce, and has barely any calories for the sauce so it’s a good one to try!

Diet Coke Chicken low calorie

As always, portion sizes are for two.

1 large chicken breast (or two small ones)
1 medium brown onion
100g chestnut mushrooms
Handful cherry tomatoes
1 bell pepper
1 tablespoon worcester sauce
6 tablespoons passata
1 teaspoon garlic salt
1 can diet coke

If you have electric hobs, preheat one to the max heat. Chop your onions and mushrooms roughly and slice your peppers, tomatoes and chicken. Mix the coke, passata, Worcester sauce and garlic salt together.

Lube up a non stick pan (I used coconut oil but Slimmin Worlders use Frylite) and flash fry your chicken so that it’s no longer pink on the outside. It doesn’t matter if it’s pink on the inside because you’re going to boil the life out of it. Throw in the rest of the veg and fry for around five minutes until everything is starting to go soft.

Pour in the sauce. The pan will be hot so it will bubble like crazy but this is what you want. Reduce the sauce, making sure you stir regularly as it will start to stick when it’s nearly done. It takes around 30 – 40 minutes depending on how good your hob is. You’ll know it’s done when the sauce is really sticky and not actually saucy anymore.

This actually tastes surprisingly good, it’s like a BBQ version of sweet and sour. If that makes sense? It’s sweet, sticky and tangy in all the right ways. I had mine with vegetables and salad, but I think it would go amazingly with rice or new potatoes.

I’m going to try this sauce out and make a pulled pork next I think. I can imagine it making a really sweet pulled pork and then having that with mustard in a crusty roll. Drool.
