Healthy Homemade KFC

I love food. I love healthy food, but I also love greasy dirty food. Except greasy dirty food makes me feel like an elephant so I try and make my own versions when I can. I posted about my healthy chips ages ago, but since then I have perfected them to an absolute T. I also like making my own ‘fried’ chicken goujons for wraps, and one day when I was really craving a KFC but equally feeling like a bag of fat I decided to make my own using both of these.

I know using cornflakes might seem weird, but seriously trust me on this. It’s the crispiest, healthiest chicken ever and seriously gives KFC a run for it’s money.

For the chips (per person)

4 new potatoes
Pinch of salt
Pinch of pepper
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper
Frylite

For the chicken (per person)

One chicken breast
Pinch of salt
Pinch of pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon of paprika
1/4 teaspoon garlic powder
One tablespoon of flour
Half a cup of cornflakes
One egg, beaten, for two breasts, or 100ml of milk

For the coleslaw:
One carrot, grated
1/2 red onion, shredded
1/2 savoy cabbage
3 tablespoons mayo (I use light)
Pinch of pepper
Dash of lemon juice

First off, preheat the oven to 200 degrees. Flatten the chicken breast (cover in cling film and whack it with a rolling pin until it’s flattened).

In a bowl, mix all the dry ingredients for the chicken. Pop the egg or milk in a separate bowl, and in a third bowl pop the crushed cornflakes.

Dip each chicken breast in the egg, flour, egg, then cornflakes. Spray a tray with frylite and put the chicken on, then put in the oven. It’ll take around 45-50 minutes. Turn after 25 minutes.

Quarter the new potatoes, put in a bowl and cover with clingfilm, and then microwave for 7 minutes. Spray an oven tray with frylite and then spread the chips out. Spray the chips with frylite, and season with the ingredients. These only need 30 – 35 minutes, so put them in when the chicken has 30 minutes left.

To make the coleslaw, mix the carrots, onions and cabbage with the mayo and pepper, and then add the lemon juice and mix again!

If you want to make it really KFC, make sure you add some beans!

This is such a healthy, and budget friendly meal so it would be perfect for students. I’ve actually made it to go into the Curry’s student cook book which they will be releasing in September :)
