Cheesy Courgette Chips

I think this is the third or fourth courgette recipe on my blog. I don’t know when I became such a courgette connoisseur but they are so versatile! Courgettes all day, every day. Except actually I always buy them, forget about them for ages and then panic because I don’t know what to do with them! I’d heard of courgette chips (or ZUCHINI FRIES if you’re American) and gave them a quick google and they’re so easy to make so I decided to attempt them.

Just a word of caution; these are not as nice as chips. They’re nice, but if you think only chips will satisfy you I suggest you make your own homemade chips or even sweet potato chips. These are best reserved when you fancy something that tastes good and will give you that smug, healthy feeling.

For once, I haven’t really adapted a recipe! Although I’ve added my own spices you know. You can find the original one here though.

Ingredients:

1/4 cup ground almonds (which is surprisingly cheap from the world food section in Tesco)
1/4 parmasan cheese
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
1/2 teaspoon garlic salt
Pinch of salt and pepper
1 egg
2 courgettes

Preheat the oven to 200 degrees and line a tray with baking paper which is lightly greased (I used Frylite). Mix all the dry ingredients together and place in a shallow bowl, then beat the egg into a separate shallow bowl.

Slice the courgettes into thin chip shapes. I kept the peel on but I actually think it will work better either without the peel, or if you score the peel by slicing light crosses into it.

Dip each courgette into the egg, then into the almond and parmasan mix making sure it’s covered. The mix doesn’t really stick to the peel, hence why you should score or peel it. Then pop onto a baking tray and into the oven for half an hour, turning once.

I was a little concerned about the water content in these as I thought it might prevent the coating from going crispy but it really doesn’t, they’re crispy and cheesy and delicious. I had mine with a halloumi, burger and sweet pepper burger which was AMAZING. If you’ve not tried halloumi in a burger, you need to get on it.
