I am currently trying to go meat free for a month (give or take my trip to Reds BBQ next week!) in an attempt to lose some weight and get out of my same old eating habits. I actually love cooking but being in my last year at uni, part time work and an internship has meant I have become lazy and sticking to the same few easy foods , so I’m hoping being a temporary vegetarian will help push me out of my comfort zone.
This recipe for courgette soup is actually a slimming world recipe (I believe it is one healthy extra point for a serving) I stole from my step mum because it tastes SO DAMN GOOD! I’ve made it loads of times because it is so simple, quick and healthy. It has a creamy, broccoli courgette-y taste, and goes amazing with crusty bread. As all soup was meant to do!
Makes a HUGE batch (enough for having friends over, or a few huge bowls for yourself)
Three courgettes
1 Tablespoon bouillon
4 laughing cow cheese triangles (in light if you want it for slimming world)
Boiling water
Roughly chop the courgettes and put them in a saucepan. Add the bouillon and pour enough boiling water to just cover the courgettes. Simmer until the courgettes are soft (about 15-20 minutes). Blend, then add in the triangles and stir until they are melted.
That’s it! So simple and easy. I think it works out about 70 calories for a bowl as well, meaning you can nip back and have more whenever you’re feeling hungry (or bored) without any guilt.
