Homemade Relish / Syn Free

After making the decision to finally kick my arse in gear and go on Slimming World to sort my diet out, I want to start home cooking more. I love cooking, but I barely had the time to in my third year of university which is one of the reasons I put on weight! Slimming World is so full of syn free (and also low fat and low calorie!) recipes that taste as good as store bought and are easy to make so long as you prepare! I made this tomato relish to go with homemade burgers and chips, and it was beautiful!

Ingredients:
3 large tomatoes
1 chilli pepper
Small red onion
1 Lime
Herbs (basil, salt, parsley)

1. Pop the tomatoes in boiling water for around 10 minutes, or until the skin splits. Peel, chop and place in a bowl.
2. Finely dice the red onion and chilli pepper and pop in with the tomatoes.
3. Add the herbs, and squeeze the juice of half a lime and then mix.
4. Optional: blend until liquid but still chunky.
5. Serve!

This tasted amazing, and can be used as a salsa for crisps, as a relish or instead of ketchup. Super easy, free on Slimming World and so much healthier than shop bought!
